On the nose it's fresh lemon peel with hints of buttery brioche & raw sugar. On the palate it's fine bubbles of lemony citrus that go on and on to a delicately fresh fine acid finish. This is a blend of 80% Chardonnay and 20% Pinot Noir.
The select Chardonnay and Pinot Noir vineyards are picked in the cool of the night to be quickly pressed to tank. Primary ferment is warm and quick to preserve the freshness of the fruit. A secondary ferment happens in the tank allowing the wine to rest and develop complexity.
