This is an exceptional example of an Australian Sparkling Shiraz from the Clare Valley in South Australia.
On the nose it's mulberry (imagine grapes and blackberries together) with hints of spice. In the mouth it's lush ripe dark fruit flavors with a creamy finish - but not sweet or cloying. Some say there is a touch of earth and leather in there as well. It's called the Peppertree because it is a unique blend of multiple vintages of Peppertree Vineyard Shiraz (often up to twenty years of age) that undergoes a secondary fermentation to provide the bubbles.
This is a very special occasion wine. So not share with just anybody! We have enjoyed it with foie gras or with roast duck. Many a bottle has been opened during the holidays. And on a few occasions it has been the dessert - all by itself.
